- → Can I substitute ginger bug for kefir grains?
Yes, ginger bug gives a spicier kick and works as a direct substitute for kefir grains in the fermentation step.
- → How do I know when fermentation is complete?
After 24–48 hours, the soda base turns slightly fizzy and tangy. Taste and judge when it suits your preference.
