01 - Lay out half of the pretzels on a baking sheet lined with parchment paper. Dollop about 1 teaspoon of peanut butter onto each pretzel.
02 - Top each peanut butter layer with an additional pretzel to create a sandwich. Gently press together.
03 - Place the baking sheet in the freezer for 20 minutes to firm up the peanut butter.
04 - In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until completely smooth.
05 - Dip each pretzel sandwich in the melted chocolate, turning to coat evenly. Use a fork to lift out, allowing excess chocolate to drip off.
06 - Arrange the coated pretzel bites back on the parchment-lined sheet. Refrigerate for 30 minutes or until chocolate is fully set.
